葡萄乾土司(星野酵母)

再次聞到星野酵母的香味.........

能夠再次品嚐到這條土司 真的要感謝朋友的分享

自從上次把買自日本的酵母消耗完畢 也有半年以上了吧

已經好久沒有做這種土司

幸好手藝沒有退步 這是第一條成品 是做給愛吃葡萄乾土司的老爺

冷凍庫的存貨已缺貨很久 就拿花上30小時養好的生種來做吧!

這次使用的酵母 一大包內有五小包 小包可做約三條 1200公克的土司

自己不用再秤 很方便 星野也有一大包的 必須自己秤 她們的酵母種類蠻多的

不同穀物養的酵母 也有不同目的使用的酵母 價格也算公道!

使用天然酵母都是慢工出細活 第一次發酵平均就要15小時

中間發酵又要一小時 最後發酵也差不多要兩小時

但是這樣的等待 是值得的 那不是一般商酵比得上的香味

華式420度 烤45分以後 滿屋子的香味

Ah, it is nice to bake bread in cold fall days.

配方雖然很簡單 沒有牛奶也沒有雞蛋 因為不想讓酵母的香味被複雜

的材料蓋住 但是麵包又軟 又香 又有彈性

包的是有機的加州葡萄乾比較小粒 比較適合 老爺很喜歡這種土司

有時早餐吃完荷包蛋和全麥土司 還會要求一片葡萄乾土司 下午或晚上 也常把它當點心

會做麵包真好 因為不僅家人能夠吃到好吃的麵包 那是外面買不到的

做麵包的過程 也是讓人有種滿足的感覺 看到幾樣簡單的材料

能讓這些美味從烤箱出來 那種感覺是喜歡烘培的人才能感受的!!

    對了 可以請問一下義大利的oo flour可以做土司嗎? 我找不到超市有賣這flour所以只能線上order,且有最少購買量,所以若這可以用來做面包,我再來這online shop 買個十包粉。不然這麼多,至少10kg 我可能得用一年

    • Before you place the order, find out first what the protein level is first. If it is not high-gluten enough, it is not suitable for bread. So let me know what the protein level is first.

  2. 妳家應該那一整天都是烘焙屋的味道吧?! 我應該很難做這種"細活", 因為實在超級沒耐心, 平常的發酵3小時我的覺得好久喔!!!
    妳的麵包真的好漂亮, 我要做幾百條才練得出這種功夫啊???? 週末沒做麵包, 病了3天昏睡3天 @^@, 旅行也沒去了…..

    • 星期四晚開始下大禹 一直到星期五都是 很多地方積水呢 所以沒來 應該是對的 天氣沒那麼好 大概也要開車extra hours 才會開到呢

      這種慢功的麵包 才好吃呢 那種發越快的 沒有這種的風味的

    住在哪兒都有利弊的 只要習慣 看自己的取捨而已 看遍美國地圖 找不到一個perfect的地方的

    土司模 台灣的烘培器材店都有賣 種類也非常多 不只尺寸不同 有的是non-stick 我買的有五節的1000公克和六節的1200公克模 都是non-stick 有蓋子的

    First time visit your website, I live in Dallas, and learn how to make a big loaf, I tried some of the recipes from the other blogs, just curious about where did you buy the loaf pan? I am doing the research about the pan, the ones I like are from Japan, I never have any experience about the overseas ordering! If you could give me some advice! Thanks!

    • We almost decided to move to Dallas 3 years ago!

      The toast pans are from Taiwan. They are much more reasonabley priced and very durable. The American ones are pricy and not quite the kind of size and shape that we use in Taiwan. I also have Japanese ones, but Taiwanese ones are good enough. The brand is 三能. They have a website. They come in many sizes.

      • Hi, Christina: Thank you so much for your prompt response! I definitely will go back to Taiwan next summer and look for it! We have lived in Dallas for a long time, people complained about the weather was toooooo hot in the summer, in fact, it is, but, as long as you find out the way to get along with it! I think it is fine! Now, it is cold in the moring, and I have to ask my son (8 years old) to wear sweater shirt every morning, but in the afternoon, when I pick him up, his sweater shirt…. guess what, in his backpack!

        I do enjoy reading your blog and definitely, I will start my adventure of learning how to make a good loaf!
