手工木綿豆腐

能吃到自己做的豆腐和豆花 是一件幸福的事

要說這木綿豆腐 應稱為 “媽媽的愛心豆腐"

會想做豆腐 是有原因的 只因為 它是女兒的最愛

女兒從小就愛吃豆腐

也許是因為她小時後 我經常蒸阿拉斯加的天然鮭(Alaska King Salmon)和豆腐

給她吃有關 她可以隨時以冷豆腐淋醬油膏當點心

久吃不膩

每回去日本 我就會先上網查詢豆腐屋

日本有專門做豆腐料理的餐廳

一回住在大阪的希爾頓 樓下有一家豆腐餐廳

因為她天天吃 到最後 坐下來不用點菜

餐廳的人就知道她要點竹籠豆腐 一個很簡單的菜 竹籠裏

盛著微熱的豆腐 配一小碗日式醬汁 可是那濃厚的豆香味

讓人難忘

 隔一年 又拜訪這家餐廳 那年 她曾兩個小時內進去吃了兩籠

我都不好意思再進去 今年冬天帶她去箱根湯本吃豆腐套餐

從第一道菜到最後一道都是豆腐有關的菜 她還樂此不彼

問以後可不可以再去

我也喜歡豆腐 但….

那次是平生第一次 我看到都怕了 下次不敢了

因為大阪豆腐餐廳的套餐 是還有別種配菜 像生魚片 天婦羅等

不是清一色的豆腐啊!

    我不是豆腐達人 但至好我可以選好的有機豆

吃得健康 外面的豆腐製品很多是基因改良的黃豆加上

食用石膏 不能稱為天然食品 我也不覺得是健康食品

就是為女兒啦!

老爺說 只要女兒要的

我就 “jump right into it".

天下的母親不都是這樣嗎??

  1. My eldest loves tofu too and I usually heat it up first (for some reason he doesn’t like it cold so I have to heat it up then let it cool) then add some dashi soy sauce. He will eat bowls of it so I let him have tofu whenever he’s not interested in meat. We used to be able to find a very good Japanese brand called Otokomae (I blogged about it) but I guess it didn’t see well (probably too expensive for most people) so Mitsuwa no longer carry it, which makes me very sad. I can’t wait to go back to Japan someday to have tofu courses! It is truly amazing how many different things the Japanese can do with tofu.

    • She used to eat tofu even for night snack. I took her to tofu restaurants in Japan. Her favorite was the zaru tofu at a restaurant in Osaka on the basement floors of Hilton. She just told me that she would fly to Osaka just to have the tofu. I forget the name of the restaurant but she remembers the logo.

      I saw your post about that tofu.

      • I told my husband about your tofu making…and we’re now on the hunt for hon nigari at our local Mitsuwa. Hopefully they still have it in stock…

        I want to find a wood mold to use it with but he wants to just DIY a mold on his own (not necessarily wood). Which do you recommend? Anyway, thanks for the inspiration!

      • By the way, we found the hon nigari yesterday at our local Nijiya (did I tell you that we have 3 of the big chain supermarkets here? Mitsuwa, Marukai and Nijiya). I showed him the photo from your post and we both thought it was a big bottle (I forgot to double-check the volume) and he almost didn’t recognize it because it’s such a small bottle. I’m not sure when we will try making tofu but I will definitely be following the steps in your other post!

      Maybe next time when you have a chance to go back to Taiwan or you can your family to buy them and ship to you. Surely hope that you can make it yourself. It do taste a whole lot of difference from store-bought ones.

  3. I’m going to Taipei at the end of this year. I definitely will buy a lot of stuffs back home. (I haven’t been back to Taiwan for more than 7 years.) Baking supplies are on my list. I’m also interested in making tofu myself. Could you recommend where I can purchase 模型和鹽滷 and baking supplies? Combination of beans and grains provides completed protein like animal products. I know it is hard to make kids eat balance diet. We are skinny family (of course not including me). I’ve tried everything to make my kids eat, but no luck. Sorry. I’m using the local library’s computer. So, cannot type in Chinese.

  5. 好棒的豆腐. 我時常到Whole Foods買有機黃豆回家做豆漿. 我們家小的也好喜歡豆腐. 天天叫要吃豆腐. 我也很想自己做. 可惜不會做也沒有材料和工具. 只好買現成的. 非常羨慕您的巧手. 您的女兒很lucky. 有這麼一位愛她的全能媽媽. 謝謝您的分享.

    我也是買Whole Foods有機黃豆回家做豆漿 再接著做豆腐 回台灣要記得買模型和鹽滷 辛苦的代價是值得的
    我女兒也差不多是天天吃 我都覺得太多 她不愛吃肉 希望哪天不要又報導 黃豆不好 不過看日本長壽的人多 她
    們吃的納豆 味增湯等不都是黃豆
