Roast Chicken with Butternut Squash

There were two butternut squash and one acorn squash

from the local organic CSA at the end of the season.

從CSA領了今年最後一次的蔬菜中有幾條瓜果 這種瓜有點類似

亞洲的南瓜

 

What would be the best way to use up these winter squash?

Butternut squash is delicious when it is roasted with butter

and sugar.

However, I don’t want to make a side dish.

 想想要如何來烹煮這幾條瓜呢?

西方人常加了一些奶油還有糖 來烘烤

但是我不想煮成副菜

I am trying to make a simple entrée that can incorporate

winter squash.

There are some Chinese dishes with root vegetables and meat.

There is the famous mashed taro with duck(芋泥鴨 in Chinese). 

The steamed spare ribs with five-spice rice powder(粉蒸排骨)

is another example. With this dish, potatoes or sweet potatoes

are placed on the bottom of the dish.

 

我想把這些瓜配合燒煮成主菜

記得中國菜中 著名的芋泥鴨 還有下面墊著甘薯或者馬鈴薯的粉蒸排骨

 

That’s it!

Winter squash will absorb the juice from the meat nicely when

they are cooked together.

就這樣子吧!

這種根莖類的瓜會吸收肉類的湯汁 變得美味!

 

A whole organic Smart Chicken was cut into quarters. It was

tossed with some extra virgin olive oil, sea salt and freshly

ground black pepper and chopped fresh thyme from the CSA.

 把一隻有機的土雞 切成四大塊 灑上一些海鹽 黑胡椒 切碎的百里香

淋上一點上等橄欖油

 

 

As for the butternut squash,  it was peeled and cubed.  Some

olive oil, salt, and chopped up sage (also from the CSA) flavored it.

奶油瓜 就切塊狀 灑點鹽 淋點橄欖油 切碎的鼠尾草

Arrange both ingredients in a large roasting pan and bake them

until the chicken pieces are done and butternut squash is soft.

Dark and white meat require different cooking time. Keep a close

eye on this to prevent over-cooking the chicken and ensure it

moist and juicy.

 把這兩種主食材 放在夠大的烤盤 烤到雞肉和奶油瓜熟透

雞腿 雞胸 和奶油瓜 所需的時間 都不太相同

所以必須注意 免得烤老 烤焦 烤乾了 烤好的食材 要先拿出來

Butternut squash is very flavorful because it has absorbed

the juices from the chicken.

奶油瓜 因為吸收雞的湯汁 所以非常美味Q甜(適度的甜味)

 

You can also use some home-made chicken stock to cook with the 

leftover roasted squash into hearty butternut squash soup.

剩下的奶油瓜 可以加入雞湯去煮 然後攪碎成類似南瓜湯

這樣子 一瓜好幾用呢

With the temperature dipping down in Chicago, this dish is  perfect

for fall. It is simple and quick to prepare. With another side

of vegetables and some house-made baguettes, dinner is served.

    • 喜歡低溫慢烤 大概華式三百五十左右 確定雞肉內部有熟(差不多華式一百七十五到一百八十度. 可以用烤箱專用量肉溫的溫度計) 時間要看份量 雞的部位等

  1. 我大女兒好愛南瓜,我都買日本南瓜做南瓜煮或南瓜粥,從未買過butternut squash,不知道如何料理,等下到farm market買一個回來試試,copy你的做法,可以嗎?

      通常blog的禮貌就是 如果我是參考甚麼人的 我就會寫出來

      這個方式 真的好吃 選butternut squash 就像南瓜 選成熟重一點的瓜 比較好吃

    • 不過奶油瓜的本身 就不像日本kabocha那樣鬆鬆的口感 拿來做南瓜湯倒是比日本南瓜更適合 因為日本南瓜太甜了

      你用烤的看看 當奶油瓜吸收湯汁 味道更好 日本南瓜做這個 還是覺得太甜了一點
