Korean Ginseng Chicken

Currently, I am watching a Korean TV series,

called “I Really, Really Like You," from Netflix. The show is

somewhat slow in my opinion. There is too much crying

and is too dramatic.

 最近在看一部韓劇 “真的 真的喜歡你"

劇情就像一般韓劇 太多集數 劇情發展也慢 太會拖

也太會哭 太戲劇化了

 

However, the show is set often at the kitchen of the

Presidential House. Although the show is about a

complicated love story, I think I am more

interested in seeing the chefs preparing banquets for the

presidential guests.

 劇中的故事 常發在總統官邸的廚房 雖然是一個愛情故事

老實說 看不出 這個難解的劇情是要怎麼走下去呢?

但是我反而 對廚師們 在廚房計畫 準備餐點 招待貴賓的過程

還比較有興趣 所以本來不想繼續再看 還是看下去吧

 

One of the dish in the show was the famous ginseng chicken

soup. It is perfect and hearty for the current weather. Ginseng

has lots of medical benefits such as increased resistance to

cold and flu and energy booster.  

 當中有一道菜 就是人參雞 這個雞湯 最適合北美現在的天氣

因為人蔘可以增加抵抗力 有體力

抵抗力好 就會減少感冒 另外也讓就學的學生 有精力

春秋是最容易傳染感冒的季節呢

 

I made this dish long time ago. It is about time to make it again.

很久以前 做過這道菜 應該再煮來吃了!

 

This fresh Wisconsin ginseng was a gift from a good friend.

It is grown by a reputable company in Wisconsin.

 這個新鮮的人蔘是朋友送的

產於美國威斯康辛州的一家蠻有名氣的農場

 

The  ingredients are pretty simple:

One whole chicken  

(I used organic Smart Chicken. The chicken was trussed already when I bought it.)

1-2 whole ginseng, sliced

3-4 pieces of ginger

some Chinese black dates/red dates, goji and dried longan

1/2 cup sweet(glutinous) rice

rice wine/salt

食材非常簡單

土雞一隻 Smart Chicken牌子的全雞 買來時 就已經綁好線

                     省掉自己處理

人蔘一 二支 切片

薑片 幾片

紅棗 黑棗  枸杞 龍眼乾 適量

糯米少許

米酒和鹽

 

The sweet rice needs to be soaked for about 3 hours.

Soak dried longan for about 20 minutes and mix with rice to stuff 

into the cavity of the chicken.

糯米先浸水大概三小時 龍眼乾泡軟 大概二十分

和糯米一起塞入雞肚中

 

Add enough water in a big cast iron pot or other big pot.

Place the stuffed chicken, all the other ingredients except rice wine

and salt in the pot.

鍋子或砂鍋 加入適當的水 然後放入雞 還有除了米酒和鹽以外的材料

 

This photo was taken at night time after cooking for about an hour.

At this time, take out the dark meat because the texture is just

right at this time. Continue to cook the rest of the ingredients.

這是煮了一小後照的照片 這時的雞肉感覺 是我們喜歡的口感

這時可以把雞腿方面的肉(dark meat) 拿出來 免得煮到太爛 沒有嚼勁

因為是自己吃的 所以還是美味前提

其他的雞架子和雞胸肉繼續熬煮 因為雞肚的糯米應該還沒有熟

煮到糯米熟 這時雞肉的精華都出來了

It takes about 2 hours for the rice to be cooked. It may take

longer depending on the size of the chicken. Add some salt

and rice wine and cook for another 5 minutes.

 

切開雞胸 看到糯米已熟 就可以了 大概要兩小時吧 看雞的大小

最後才加點米酒 和鹽 再煮個幾分鐘就可以

The chicken soup is absolutely delicious now. The flavor from

all the ingredients is all in the soup itself. You can eat the

white meat if you prefer. For us, dark meat still tastes better.

 

我們不喜歡吃雞胸肉 加上煮到這個地步 雞胸肉根本就沒有味道

已經變得很爛的

可是這時的湯汁 真的是難以形容的好喝

把先前拿出的雞腿等 放在湯中 趁熱喝

啊! 太好喝了 竟然喝了三大碗!!

雞湯自然的甜味 還有棗類 枸杞自然的甜味 全部都散發出來

讓怕人蔘的女兒 也讚美不已 湯汁的鮮美 

The traditional way of eating the rice is to mix it with the soup.

However, I like to eat the glutinous rice separately from the soup.

我把雞肚內的糯米和龍眼乾 拿出 另外裝碗 等涼後 更Q

飯粒 已吸滿雞汁和雞油 還有龍眼乾的甜味

好像傳統上 是把糯米飯和湯和在一起吃 可是我不喜歡像稀飯的感覺

只要自己喜歡 怎麼吃都無所謂

 

喜歡人參 可以適量加入 但是放太多 也有苦味 小孩可能會排斥

喜歡煲湯的朋友 這個是個不錯的燒法

人蔘的澀味 也被棗類等蓋過了 所以小孩也會喝的

補一補冬 讓小孩身體好 不容易生病!

  2. You have Meijer in Chicago? I shoppe at Meijer every week, I will look for the chicken you mentioned about next time. I just found Rodelle chocolate powder there, not in Costco. It is more expensive than others, but , only two of them left……, I bought one and opened it, it really smell very good. Costco carries the organic whole chicken, two in one pack, about $20, have you tried that? Yeah, it is time for the warm chicken soup now. Have a nice weekend!

    • Yes, I also shop at Meijer. I don’t buy the organic chicken from Costco any more. The texture of Smart Chicken is much better. 比較像土雞 因為這個雞從來沒有冷凍過 這個商人因為在法國吃到好吃的雞 回來後 就進口了這樣的冷藏設備 以前這兒的Target 也有賣 後來沒賣了

      但是每個地方賣的 也有可能不同 我也是在Meijer買King Arthur flour 他的價格比較好 特價時更便宜

    • 人參也是中藥 還是要看個人的體質 但是一大鍋雞湯 只有一枝花旗蔘 藥效應該不很強的 而且 我們不是天天喝這個的 所以應該ok 甚麼食物都是要適可而止

    去韓國超市就看見一包包的人蔘雞材料包 可惜不懂韓文 原來用手邊現成的材料就可以啊

    把人蔘換成西洋蔘應該可以吧 我們家小孩都不喜歡傳統的中藥雞湯 希望他們會喜歡這個 謝謝您

    • This soup is absolutely delicious. It is very good for your boys.看他們可以接受人參的程度 不要第一次放太多 免得他門拒絕 只要紅黑棗龍眼乾多放點 湯汁非常鮮甜 現在多喝點 就不會感冒 胸肉不好吃 就不要吃 營養都已經在湯裡面 趕快煮給你兒子吃

      • This is great!! I’m sure we will love it. The kids and I had been sick for the last few weeks, so this soup will be great for us. Can I use the red ginsen instead of the fresh one? I still have some 糯米, red ginseng, black date, and goji which i can use for this soup. Off to the market now~
