台南鹹粥

這個是台南著名的早餐

小時候 在台南市民族的石精臼

可以吃到以夙目魚骨熬的高湯

加上新鮮的夙目魚和蚵仔

那種鮮味 只能在夢中回味

買不到新鮮的夙目魚

只能用菲律賓進口的冷凍夙目魚肚

退凍 切塊

還有韓國的冷凍蚵仔

 

我們家的做法

將台灣的綠竹筍 切絲 稍微炒一下

加入水 若有夙目魚骨頭 就可先加入熬煮

加入夙目魚塊和蚵仔 煮熟就可 免得過老

還要加入多量的油蒜酥

最後加點鹽 香菜末 芹菜末(今天沒加)

灑點白胡椒 即可

把白飯放到湯碗 然後盛入熱湯和料

 

雖然沒有台南鹹粥那樣的鮮甜

畢竟沒有多量的魚骨熬湯和新鮮取出的蚵仔

味道當然不夠好

但是在國外 能夠這樣 已經不容易

這些材料 中國或韓國店 也都方便取得

就讓多量的油蒜酥

來遮掩不足的美味吧!

  1. 好鮮的粥啊(我可以吃掉一大碗公!!!) 這讓我好想念東港外婆家的鹹粥,我小時都叫這"湯泡飯"。說到這,不禁想起我老媽好像做的湯泡飯還挺得我和我哥的胃口…至少我記得我從沒偷偷倒掉這😀

    今天去了在New Jersey的Hmart真是超大間, 讓我這土包子開了眼界, 原本想買冷凍蚵仔可是膽小, 既然你買了也通過你的嚴檢, 下次也買來試試看^^

    • H-mart 還是中國店都有賣台灣來的煮熟的Jan 沙拉筍 很嫩 還可以 當然沒有當天採的甜啦 我這邊如果可以種 那我都要笑著睡了

      冷凍的鮮味 沒有新鮮的好 好久前 H-mart 有韓國來的新鮮的小粒蚵仔 我這邊現在沒看到 也許你那邊有

  3. I’m sure I’ve had some kind of 台南鹹粥 though I don’t think it was at 石精臼 (that’s a place, right?) I’ve been following my parents and grandparents my whole life – eating where they take us but I really should learn how to navigate Tainan on my own so that someday I can take our boys to all the good eats! I’ll be sure to check the “eating map" that you posted with your daughter’s favorite places to eat….By the way, our internet was down for almost 24 hours so I have some catching up to do…

    • Actually that vendor has moved to a different location further away from town center for many years. The night market on 民族路was long gone many years back. But the little 石精臼(這個要用台語發音) is still there because they are not street vendors. It is much smaller in scale now without the street vendors. When I grew up, my family visited there often because lots of our favorite vendors were there.

      When you want to go next time, I will write you a food map. They are spread out but they are all in the center of the town and very easy to get to even by walking.

  4. you can replace frozen Korean oyster with Costco’s almost fresh oyster. As a result, it will improve the taste of this soup a lot. I am kind of homesick after I read your Tainan related food article every time. I have been out of there for almost 40 years. However, I still remember 石精臼. All of my childhood was centered in 石精臼. I was graduated from that elementary school next to 石精臼. Judging from your article, I believe you may be not as old as me. Anyway, I have missed all of foods in Tainan.

    • I could not get Costco’s fresh oyster when I made this. The fresh ones are much better in taste but they are really too large for this soup. They don’t carry this item regularly probably only during the seafood event.

      石精臼 was one of the places that my family went to for traditional Tainan food. At that time, that road became a 夜市 full of vendors selling yummy food.

      Drinking coffee and listening to music when it is raining. That sounds romantic.

      • I am sorry to hear that Costco Chicago does not carry oyster all the time. Here, in Seattle, they carry it year round and they have small size package. It is not as small as the one you enjoyed in Tainan, about twice size. That is one of reason I suggested you move to Seattle for retirement. It is not raining that much as you described. It is in winter most. However, I like the atomsphere of wet, cloudy winter, which you can enjoy coffee with fireplace and music surround yourself during chilly weather, not too cold but a little snow.

        • Costco carries different items from store to store. That was actually the first time that the local Costco carries canned oyster here. I was just lucky to see them because they were sold out probably in a couple of hours.
